This brew has a long tradition! It is known as claret in France, hypocras, lûtertranc, mulsum among the Romans, spiced wine, and spiced wine with honey. Thousands of years ago, sour wine was boiled with honey and spices and consumed.
Hypocras was particularly sought after in earlier times as a medicinal product with digestive properties. Only the nobility and clergy could afford expensive honey and exotic spices, so this drink was served to guests before and after lavish banquets. Hypocras can also be found in medieval medical recipes. Based on one of these traditional recipes, the master brewer today brews his white Hypocras with Lower Austrian white wine and honey , heavily seasoning it with cinnamon and cloves.
Hypocras received excellent ratings in tastings with beekeepers and customers. Its flavor is reminiscent of apple compote , and its typical 10% alcohol content ensures a pleasant drinking experience without overintoxication.
