This organic honey from the Vienna Cobenzl winery has not been heated or filtered, so that all of the ingredients have been preserved in the honey. As expected, the honey crystallizes very quickly and becomes solid and hard shortly after the honey harvest. This type of natural honey is called raw honey. This term is the literal translation of the US English " raw honey ".

In the first 2 photos you can see the still liquid, fresh honey shortly after the harvest in summer and in the 3rd photo you can see the solid, yellow, already crystallized honey a few weeks later. Because of its naturalness, this organic honey is particularly suitable as a spread on bread and pastries. Many people also use this organic honey to add garlic, ginger and other ingredients. To do this, the raw honey must be made liquid and this is best done in a lukewarm water bath up to a maximum of 40 degrees Celsius. The residual heat from the oven can also be used, or placing it next to a tiled stove has proven to be effective in making the honey liquid. Under no circumstances should you use the microwave.

The honey has a very strong, floral aroma and is, as expected, sweet. Since only small quantities are possible to harvest, this honey is regularly sold out and the honey harvest is unfortunately not enough for a full year.
