Heather honey is dark with a reddish hue and a jelly-like consistency. As it crystallizes, the color changes to a lighter shade. This honey is among the most robust honeys available, and anyone who has tasted heather honey will always return to it. It is most commonly produced in France and Norway, and less frequently in Scotland or Germany.
