Leatherwood honey from Australia, rarely available in Europe. The very tall Leatherwood trees grow in a national park on the southern island of Tasmania. With their bright white blossoms, the trees attract insects and honeybees for pollination. A beekeeper with a good beekeeping location near the national park can expect a good honey yield during the flowering period.
This special blossom honey from Down Under has a creamy to solid consistency (never runny) and can be described as sweet. Like the related mock elm honey varieties from South America, the taste of leatherwood honey is reminiscent of marzipan.
