With bright white flowers, the trees attract insects and honey bees for pollination. This special flower honey from Down Under has a creamy to solid consistency (never liquid) and can be described as sweet. Like the related false elm honeys from South America, the taste of leatherwood honey is reminiscent of marzipan.
