This honey comes from a New Zealand tree species called " Rewarewa " in the Māori language. Since this tree is endemic to New Zealand, there is no direct German translation. English-speaking settlers have referred to the tree as "Honeysuckle".
Rewarewa trees are native primarily to the North Island, but also to the north of the South Island, in the so-called Marlborough Sounds . These are deep valleys that were flooded by the rising sea level and now form a network of rias.
The tree itself is an evergreen broadleaf tree, reaching a considerable height of up to 30 meters. Rewarewa trees rely on birds and insects for pollination. Therefore, the blossoms are striking in color, size, and shape. For the honeybees of New Zealand beekeepers, Rewarewa trees represent an excellent nectar source with a high honey yield.
Rewarewa honey is rather firm when cold and becomes creamy as the temperature rises. However, it never becomes completely liquid. Its flavor profile is very complex, with a noticeable malty, somewhat earthy taste. It is most comparable to a dark forest honey in Central Europe.
